Most Swedish oysters come from Bohuslän, and are hand-picked mainly near Grebbestad, which is also where the oyster safaris leave from.
          
In 2004 the non-profit Oyster Academy was established, for oyster lovers all over Sweden. One of its aims is to realise the huge potential of the exquisite Swedish oysters, and to support and encourage oyster lovers, restaurateurs, fishermen, suppliers and divers.
      
In Bohuslän it’s not only possible to purchase oysters – you can also come along and pick them at Bryggudden outside Grebbestad. ’Brygguddens Ostron´ is beautifully located in a cove, flanked by the smooth pink granite cliffs so typical of the region.
       
At Brygguden the oysters are picked with the assistance of divers, who also pick mussels using a sort of rake. This gentle way of harvesting also means that the mussel and oyster beds are never decimated; the ecological cycle is left undisturbed. This means that regrowth and quality can always be kept at a high level. On this type of oyster safari, small groups can take part in the harvesting, and can also eat these super-fresh oysters direct from the sea.
        
Another way to enjoy these fresh oysters is at the Ostronbaren oyster bar on the island of Käringön. Here you can treat yourself to oysters and champagne in a large tub, full of sea water heated by a wood-fired furnace, as you admire the view across to the Måseskär lighthouse.
