Cottage cheese and avocado salad

2 ripe avocado
500 g (1 lb) cottage cheese
1 teaspoon unsweetened mustard
1 tablespoon grated fresh horseradish
salt and pepper

200 g (8 oz) smoked beaver or other smoked meat, thinly sliced

Cottage cheese and avocado salad
Peel the avocados and remove the pits. Mash the flesh with a fork. Add the remaining ingredients, seasoning to taste. The horseradish intensifies in flavour, so don’t add too much.

To serve
Arrange the smoked meat on a dish with the salad alongside. Make the salad just before serving so the colour remains fresh.
